ARE YOU? If you entered this thread believing you're getting fat, chances are you are right (cause the mirror and bathroom scales tell you so) and at the same time... shockingly wrong!
Investigative Journalist Nina Teicholz' potentially economically devastating, medical paradigm shifting and massively LIFE SAVING!!.. 'Big Fat Surprise' address at the Cato Institute.
Of course you are right, what you see and measure is just real. Teicholz' YOUTUBE vid embedded above is a must see, if you're up for investing the time and attention to view the whole thing. Or skip / postpone if you can't, anyhow here's my brief understanding of its important message. I'll get straight to the point: in the highly dynamic field of Nutrition Science there's a new sheriff in town. It's a state of the art remedy for Obesity (with impact on risk of related diseases like Type 2 Diabetes, Cardiovascular disease and perhaps Cancer) called the Carbohydrate-Insulin hypothesis. Research into CIH has postulated a causative chain starting with (the intake of) Fattening Carbohydrates (like my favorites burger & fries or universal classic Spaghetti Bolognese)...
..leading to..
Increased Insulin levels (hormone that manages sugar in the body)...
..leading to..
Obesity.
You will not have missed that the CIH holds that in today's nutrient laden diets (including our pasta dishes, fast food yet also cereal breakfast and 'lean' chicken salads) the carbs are the problem, eaten in combination with proteins, fat and fruits and fiber. Yet CIH's discovery as a promising solution to the American and worldwide epidemic of Obesity has gone largely unnoticed, because it indicates the need for a radical departure from the Dietary Guidelines for Americans (not to mention b-b-billions made off producing all the variety of foods that most of the West, increasingly most people on Earth have become accustomed to). The opposition to the Carbohydrate-Insulin hypothesis seems to include a reluctance by the scientific community and government institutions to speak out on its merits, amounting almost to a deafening silence. This would seem to be a political, not purely scientific problem of say: do CIH based diets / lifestyles work or not. Fact of the matter is that CIH has been tested with full scientific rigor now, involving 100 trials following 7000 human subjects (type: randomized controlled clinical trials), 6 of which lasted for 2 years.
These trials' outcome to date is that adherence to CIH dietary guidelines almost always resulted in weight loss without hunger/calorie counting.
CIH regimes are seen to reverse Type 2 Diabetes.
Also recently found to reverse fatty liver disease.
I believe governments and scientists and the food industry need to get over themselves (yes, big changes are very painful) because we'all (uhh.. most of us, way too many) are getting fatter and fatter, and I fear that if the powers that be wait for too long we are going to EXPLODE. Or die of strokes, agonizingly slow Diabetes or keel over from a heart attack. People are dying I shirt you not.
To end, thanks to the tremendous effort of Nina Teicholz (and many others, seeking 'forbidden' knowledge) we can say confidently that the accepted theory of healthy nutrition, as codified in DGA - the Dietary Guidelines for Americans HAS exploded, is dead. Its 'scientific' basis, the Diet-Heart hypothesis (eating animal fats lead to heart infarction) by dr Ancel Keyes has been found flawed, its dietary regimes at best ineffective, at worst the cause of a rise in cancer, diabetes and heart disease and its debilitating precursor: OBESITAS - getting fat.
There it is. For anyone interested, next I'll post some info & links on CIH based diet plans.

I started a health food kick about 3 weeks ago. I've dropped 10 -12 pds so far. 30 to go !
I weigh 200 at the moment. I'm aiming for about 170 - 175

I made my diet & lifestyle change nearly two months ago straight out of the doctors office, having been put through a full body work up, learning the well deserved outcome of some three years of overworking and 'rewarding' 'comforting' myself with too much of my fav foods, topping off with extreme levels of prolonged stress. Trusted my fitness and resilience, as in my teens and twenties, would hold out, took health too much for granted. Alas my BP was through the roof while I seemed to be steadily gaining pounds, plus starting to feel run down. Because I work out religiously I didn't get Obese, gaining more muscles than body fat, but still.... I thought I might not look good in a bathing suit come next vacation and terror really struck home. My doctor was not amused, and very very seriously advised to make a big change NOW. I was put on a 'low carb' and 'intensive exercise' program.
Did it. Never looked back.
I'll attempt to describe what I've been up to for general informational and entertainment purposes. I am not a nutritionist or medical doctor. You may laugh... this is healthy! Here is what is working for me. As I am writing my blood pressure has lowered within normal range, weight steadily lowering to (close to) ideal BMI. I'm not hungry (hunger psychology will wreak havoc on any diet plan!), feeling gooood with plenty of energy.
INTERMITTENT FASTING
Does not mean starving yourself, it's a well thought out re-patterning of eating habits and meal times. My first step was getting rid of snacking between meals, including night time. I am Dutch, born and bred 2nd half of the 20th century on three goodly meals a day, this equals mostly meats, fresh veggies, potatoes and rich gravy during the 60's and 70's. I began loving the supersized menus at McDonald's and Burger King late 1970's, although I've been partial to french fries and Vlaamse Frieten, a rougher, thicker hand-cut version, as well as salt'n vinegar doused Fish and Chips since time immemorial. Indian Curries and culinary foods also became a favorite. So: eating three meals, eating well BUT NO SNACKING IN BETWEEN was my change nr. 1.
I'm from an extended family that likes its booze, at festive gatherings we guzzle the stuff. But next I stopped drinking alcohol altogether. Replaced it with a wonderful mineral water (actually, any brand will do), I opted for San Pellegrino (Italy) always with a squeeze of bio organic lemon. This one beverage replaces all my cold liquids intake, alcoholic, reg and diet sodas etc. except for tap water. I kept morning coffees and as much tea as I like.
Next, within days, I changed the foods. Big change, we humans are animals of habit. Got rid of potatoes, pasta, rice, bread and sugar/sweets. I Googled low carb foods and decided to try Dr Eric Berg's recommended list of socalled KETO foods, found most in the local supermarket. Each meal time this is what I put on my plate. A Devil Mountain's heap of rucola salad / mixed leafy greens lightly pressed to form a bed for olive oil & butter quick fried onions, paprika, hot peppers, avocado, green olives, chunks of matured goat's cheese, wild caught salmon (or alternatively grass fed&finished beef / free range bacon and pork / free range fried eggs), blanched brussels sprouts and for a nice bite, garlic (whole) and pecan nuts. Finish your plate by sprinkling with Extra Virgin olive oil and a squeeze of fresh lemon. I promise: it is an experience.
On special days I combine one or two bio organic fried sausages with sauerkraut. Again served on top of lots of fresh leafy greens. For condiments I love Dijon Mustard and any canola oil free Mayonnaise.
For a rare treat I add a dessert of fresh blueberries topped with bio organic whole whipped cream, sweetened with Xylitol sweeteners substituting for sugar.
These are big meals that'll fill'ya up, lot's to chew on, actually great taste and like I said, nutritious enough to stave off my, I suspect most people's hunger.
Now, how to get into fasting. The method of Intermittent Fasting is simple. Moving your three meals until there's two, and then one per day left!
Normal breakfast time for me is early, because early morning is work out time. During the first 'low carb' weeks I delayed breakfast by an hour, next day one more hour, until it got close to lunch. Then I merged breakfast and lunch into a single BIG 'low carb brunch'. I was down to 2 meals/day.
Rinse and repeat for brunch and dinner. I moved the midday meal to a later and later time, until it merged into the one evening meal per day I am enjoying now. I kid you not, this is fun. These supposed 'diet' foods are truly delicious, making me wonder how come I haven't been eating like this all my life! I'm full, not hungry (although when you do get hungry, it means it is time to eat, no need to be hard on oneself) and feel plenty of energy. Getting slim too, are you reading this young ladies?
Above dietary changes are accompanied by an 'intensive' physical exercise program. Doctor's advise I can live with, I've led a superactive life since age 6, starting as a judo player. Everybody differs, but I love training hard, always have. Early morning I do forty minutes of Panaerobics, running, walking and jumping with light 1kg weights. Mix in some interval training (short bursts of intense effort followed by rest/recovery), finish up with stretching and meditation. This huge physical output benefits heart health and your overall mood, yet doubles as a nice test whether you remain free of hunger. Anyone reading this: isn't this mondo WEIRD stuff?! I'd expect to get hungry enough to take a bite out of a plumper family member. But no hunger.
To end. Here the dietary/nutritional technology reveals itself. Low Carb otherwise known as KETO diets are designed to switch the energy system of the body from running on sugar (=carbohydrates) to burning fat. Simply: sugar runs out far far more quickly than our fatty cells, the latter of which seem to work as a (near) eternal fuel source keeping hunger at bay. (Check out dr Eric Berg's video on KETO.)
By the way, I am not crazy. I realize full well this new lifestyle I'm experimenting with is unusual, not how I normally go about my life. At some point I will seriously consider where I stand in regard to going out for a Big Mac or Fish'n Chips once again, enjoying a good glass of wine, just normal life. I don't want to lose friends over having become an insufferable diet nut. This will be a real issue for the future, maybe a contemplative day in 2023.
In the mean time I thank God for having found KETO. Thank you too dr Berg, Nina Teicholz and some of the finest colleagues and scientists for making the technology available, GOOD JOB!

Good for you too Purr ! I've been watching Dr. ? Berg's videos since I started the health kick. I too have been doing intermittent fasting and it's worked so far. Beer ? I switched to light and sip slowly. Homemade Micheladas are great, especially with hot sauce. Nothing like a homemade chelada Clamato Fuego with Xtra capsicum.
I have severe bp issues so I have to be very careful with any alcohol. I take zero meds although at one time I was prescribed everything under the sun plus some. I can't exercise, spinal injuries wont allow it. Bummer. I use to be very fit. I eat assortments of fruits and veggies, and some fish, plus I purchase my grass fed beef from a rancher friend. I cut out sugar a long time ago. Tokes

Dandy ! I enjoy the flowers in a tea... The roots are great in the Spring.. And the leaves are slightly bitter too but I mix mine with fresh grown green onions out of the garden, tomatoes, garlic cloves, carrots, dill pickle relish, and chopped celery topped with croutons, sunflower seeds, extra virgin olive oil, apple cider vinegar, a touch of mustard, and ranch dressing...Although thousand island or ceasers works too.. Sprinkled with dried avacado seed from a week ago and a dash of pure lemon juice... In the morning I'll have my usual 3 cups of black coffee followed by water mixed with pure lemon...no sugar. I'll probably fast until about noon..Or maybe have a small dose of peanut butter with raw honey.. I bought a blender recently..Best investment ever. Today I combined blueberries, fresh picked mulberries, nectarine, peach, a bit of lemon and lime, darn it the banana went bad ..had to throw it away,... I stuck it in the freezer for 20 minutes and consumed mixed with %.2 percent milk. Great stuff with different combinations of healthy concoctions... So far I find myself spending and eating less, and feeling better, ...

Sure is, for convenience I often shop at a Dutch local supermarket chain, has franchises worldwide, even in the States, and what I like is its huge range of foods, fresh, organic, processed or ready-to-eat, whatever takes your fancy. Except that processed/RTE almost guarantees it's got GMO, especially Canola plant derived oils in them. I'm not losing sleep over consuming some GMO (unavoidable) now and then, but I've really tried to avoid Canola oil, due to its origins in a highly toxic machine oil: but it seems to be in EVERY product this company formulates!
So now I cook the foods in our household 'from the ground up' using fresh, organic ingredients, from small specialized shops and local farmers who guarantee, can actually show you how they raise and treat animals and crops. Some effort is involved, but the reward is enjoying truly healthy meals. And I get my frying done in a rich mixture of Olive Oil and 'grass-fed' Butter. Fried ingredients do wonders for taste/smell, so I mix up roughly cut onions, paprika, Jalapeno and Habanero peppers plus whole garlic cloves with herbs from the middle east like Cumin, Aleppo Pepper, Kurkuma and Za'tar and always seasalt for quick frying in the Wok.
The key to the 'low carb'/KETO diet-plan in this thread is what is left out. I virtually cut out carbs, in fact all the carbohydrates I take in are in the form of fresh leafy greens, cooked/fermented cruciforous vegetables and lots of them. Vital nutrients come from some great meats or fatty fish like mackerel, add some avocado for Potassium, round it all off with squeezing that lemon, some chunks of farmer's goats cheese, maybe a pinch of Berg's superb Nutritional Yeast, a dollop of traditional Canola free Belgian Mayonaise and we're gazing at heaven on a plate. IMO.

Tokes Hi X, I admit to never having been much of a beer drinker (although I've partaken, mainly Heineken and brown ale when working with folks who were) so I had to google some after reading your post. Jerry Fort dude has a nice way about him and his presentation is kind of beer idiot proof enough so I really got a sense of how such mixer beer, spiced/salted up, so expertly poured, lovingly handled and indeed savored in sips could add joy to one's life.
Alas, I've lived long enough too to know the actual experience would be wasted on me. I cannot 'beer' the bitterness.
But I get your important point. When we set out on a health program we need not, should not suffer. We should not hunger, we should not be forced to be frustrated and dissatisfied by eating portions fit for mice. In fact how you describe your selection of yummy a healthy diet, sweet recipes and choice beverages can be a feast!
Right now I'm in a phase of my year long program where I'm changing, guided by our general practitioner, my eating and drinking ways to gain a new future, a new health and even life expectancy.
By now I've tried living without alcohol for close to 6 months. I may not be crazy about beer, but ahh.. don't mind wine, whisky, wodka etc. all that much. So this was a big experimental step. And the outcome is nothing short of remarkable. I feel just as happy, energetic and healthy without a drop of the booze as when I had a good glass of this or that on the table for every occasion, stress or exhaustion from work, enjoying good company, showing hospitality whatever. No, I realize I actually feel better. Shocking...
It has come to a point where I am making a life decision to stop drinking altogether. No need for it. And my health is so much better applying the nutritional technology from Dr Berg that I have begun designing a (near) alcohol free way of life for the last segment of my life. I am negotiating with my family/friends about special occasions where I join in as a lovely Chivas Regal whisky or Palo Alto red is passed round, to celebrate or mourn or show respect. I refuse to become the fanatic teetotaler Low Carb-KETO nut. People and the diverse aspects of their lives have to fit together imo.

They are allowed to poison the air, water, our food supply and chipped away the average American's say in Democracy and are allowed to be above the law and kill people with their poisons in our food. I agree any commonly held theory of nutrition, like the DGA - the Dietary Guidelines for Americans, will be politicized as much as it has been once subjected to scientific inquiry, because it is all about 'our daily bread'. Nobody gets elected for office on the people's empty stomachs and it can be said that America, just like Northern Europe are lands "overflowing with milk and honey", if you have anywhere near medium level income you can have plenty to eat, you may eat yourself to death. Trillions of dollars and euros are made AND EARNED BY WORKERS producing these foods. Yes, some high up in the business community and government will be aware the scientific guidance was wrong, and has been doing massive harm, killing people by overloading the diet with refined carbohydrates. Still they ride the tiger. Most of the world public, including our baker, pizza restaurateur, doctor, deli/food store manager, politicians regardless of party included, almost all of us buying that stuff for our families are unaware there's anything fundamentally wrong with how we eat. There need not be bad intention for the most part. And in times of plenty our bodies are evolved to switch to running on sugar, and if overdone, like as in making all manner of carbohydrate rich foods (bread, fruits etc.) the main staple to be consumed continuously WE WILL AS A SPECIES SWELL UP and on an epidemic scale succumb to extreme obesity, Diabetes Type 2, cardiovascular disease and cancer. I believe this already is happening. The metabolic state called forth by the diet plan in this thread, Low Carbohydrate or 'keto', is one of Fat Burning, running the body on its own cellular fats (=Ketosis). It's no invention or therapy devised by say Dr Berg or any doctor/scientist. Merely REDISCOVERING an alternative evolutionary survival mode, meant to hold over humanity during times of scarcity, famine, drought or even cosmic disaster. Doing KETO is like being a camel who crosses the hot desert without water or food, burning the fat in its humps so to speak. No sweat . Ketosis as a working system in our bodies tells an ancient secret, that of our ancestors' experiences with terrible famines over the past 350,000 years and by the skin of our teeth not becoming extinct. Today, if you're dangerously overweight from too many Bic Macs and fries and Cokes, or just eating 'normally'(!), the practice of keto, plus understanding its scientific underpinnings like the Carbohydrate-Insulin Hypothesis (video opening post), can save your life.
